Thai Green Curry Salmon
This recipe is probably cheating because it uses a pre-prepared curry paste and isn't prepared from scratch. But our goal is quick and easy dishes that anglers can prepare, so this fits the bill.
- Filet and de-bone salmon, remove skin, cut into 1-2" cubes.
- In saucepan, pour one can of coconut milk, turn heat on medium.
- Add thai green curry paste and flavouring:
- "Thai House" brand: 2 tablespoons paste, plus 1 tablespoon white sugar, 1 tablespoon fish sauce, 3 tablespoons chicken stock.
- "Asian Gourmet" brand: open package, all flavouring already included.
- Add salmon and simmer for 20 minutes.
- Add veggies on hand...red peppers, yellow peppers, green peas, snow peas. Add them during simmering according to how long they need to cook, avoid overcooking to a mush (eg add peas with 5 minutes left)
- Serve on basmati or jasmine rice.
- Add diced fresh cilantro and lime slices for flavour and presentation.
