"Aussie-Style" Humboldt Squid
An oddity in 2009 was giant Humboldt squid in local waters -- certainly not typical off the west coast of Vancouver Island. A visiting friend from Australia catches squid down under, so he knew how to cook them. That makes this recipe "Aussie Style".
- Lattice cut the squid, then cut it into 1 inch pieces.
- Dust it in cajun spice and flour, salt and pepper.
- Wok toss it in butter and garlic.
- Serve with some sweet chili sauce on the side.
