Orange Oven Poached Spring Salmon

Who says gourmet cooking has to be difficult?

  • You need a cup of bread crumbs or finely crunched up crackers.
  • Grate the rind of one orange into the bread crumbs.
  • Add crushed black pepper, as spicy as you like it.
  • Rinse the fish and shake dry - you want it damp, but not dripping.
  • Dredge in the crumbs and place on an oiled baking dish.
  • In a bowl, juice the orange and add 1-2 tbsp of butter, microwave until melted and stir.
  • Pour over the fish.
  • Bake at 400 for 15 minutes, until fish flakes easily.
