Halibut Vera Cruz
Poach the halibut in a foil packet, along with an assortment of tropical flavours. Yum.
- Cut halibut into serving size pieces.
- Place in foil packets, along with diced tomato; garlic; purple onion green, red, and yellow pepper; mango; cilantro.
- Add juice from 2-3 limes and a half teaspoon of olive oil or vegetable oil.
- Place on BBQ grill on med-low heat, approx 5 minutes per side on medium-low heat. Check one piece to ensure it is cooked -- should flake easily and juices run clear. DO NOT OVERCOOK, it will dry out!
Other optional additions:
- Tablespoon of white wine per packet.
- Chunky tomato salsa.
- Sliced JalapeƱos.
- Sliced olives.
- Capers
Mango, lime, and cilantro ... great combination with halibut.
