Halibut Spring Rolls
Rice wrappers can be used to serve halibut, salmon, or other seafood, hot or cold. Just like a tortilla wrap, it can hold whatever combination of ingredients you want.
To soften rice wrappers:
- Soak rice wrapper in water until soft, 1-2 minutes
- OR soak a dish towel, place the wrapper on the towel, and cover over for 2 minutes, or until wrapper is soft (ensure no crunchy bits if making soft salad rolls).
Hot Spring Roll:
- Cut skinned halibut into serving size pieces, 1"x1"x3".
- Place on rice wrapper with whatever combination of ingredients are desired: good options include green onions, fresh cilantro (coriander), fresh basil, lime, thinly sliced carrots, ginger, garlic, shredded cabbage, bean sprouts, shitake mushrooms.
- Add sauce desired: thai sweet chili sauce or pad thai sauce are tasty options.
- Wrap up -- bottom side first, then sides in, then top over.
- In a hot oiled non-stick pan, sear 2 minutes on folded side to seal, then sear 2 minutes on other side.
- Toast in 400 degree oven 5 more minutes to finish.
- Check one to ensure fish is cooked -- lightly flaking meat. DON'T OVERCOOK!
- Serve with dipping sauce of your choice.
Cold Salad Roll:
- Cook halibut filet as desired. Recommend method.
- Cut skinned halibut into serving size pieces, 1"x1"x3", and let cool.
- Place on soft rice wrapper with whatever combination of ingredients are desired: good options include green onions, fresh cilantro (coriander), fresh basil, lime, thinly sliced carrots, ginger, garlic, shredded cabbage, bean sprouts, shitake mushrooms.
- Add sauce desired: thai sweet chili sauce or pad thai sauce are tasty options.
- Wrap up -- bottom side first, then sides in, then top over.
- Serve with dipping sauce of your choice.
Great finger food for a party ... impress your guests with tasty halibut. Experiment with different flavours and fillings for variety.
