Crab Dip
An improvised recipe...you can use pretty much whatever ingredients you have on hand, it all tastes good when mixed with sweet Dungeness Crab! Experiment with different proportions and spices to suit your taste.
- Clean and boil 1 or more crabs, Dungeness or Rock.
- Unshell the crabs...no shell fragments! Put the crab meat in a bowl of water and swish around, the heavier shells will sink to bottom. Scoop out meat and press out as much water as possible...important...you don't want watery dip.
- Place cooked and cleaned crab in mixing bowl.
- Finely dice a handful of chives and add. (or substitute green onions)
- Add a tablespoon or two of sour cream, yogurt (not watery), and/or mayonnaise (go light on the mayo).
- Crumble in a tablespoon or two of feta cheese (or substitute cream cheese)
- Can add in a variety of spices to suit your tastes: dill, a little paprika or cayenne for zing, parsley, cilantro, etc.
- Stir and serve.
Catching enough crabs to feed a hungry group is usually not a problem around here. The first challenge is unshelling them fast enough. The second challenge is not eating it as you shell it!
